1 Kg mutton mince

25 grams grated cheese
|
| |
125 grams chicken fat
|
| |
8-10 No. green chillies
|
| |
2 tbsp ginger paste
|
| |
1/2 teaspoon garam masala
|
| |
1/4 teaspoon nutmeg powder
|
| |
1 teaspoon chilli powder
|
| |
salt to taste
|
| |
1 No. egg
|
| |
skewers for roasting
|
| |
a little oil for basting

Method |

For serving:
50 g onion, cut into rings
4 limes, quartered
MIX the mutton mince, cheese, chicken fat, green chillies, ginger paste, garam masala powder, nutmeg powder, chilli powder and salt. Mince this mixture thrice in the meat mincer. Add the egg and mix well. Check for seasoning. With wet hands, take a ball of mince and wrap it tightly round the skewers. Roast in a tandoor or oven at 200o C for five to 10 minutes, or till done. Baste frequently with oil. Slide off the skewer onto a plate. Serve hot, with onion rings and segments of lime. |
